The author has been creating recipes and menus for the food served at fitness house, the company dining room and Rodale press, a health oriented publishing house for nearly 25 years. I was surprised to see meat included in the book, since my understanding was that Rodale house were vegan/vegetarian, but obviously I was mistaken. They do insist upon slow preparation slow cooking and low temperatures for the meat dishes, and an avoidance of smoking hot oil for any of the cooking.
